The kitchen

Two hundred and thirty-nine dishes, set properly

Mole on the Yolandas. Chile verde cooked down with pork. A stone mortar that arrives still steaming. Fourteen numbered lunch specials from noon to five, and a children's plate for five and a quarter.

All of it on one page, with a price beside every line — because right now the same dish is quoted at two different prices depending on which page of their site you land on.

La cantina

Seventeen tequilas, and a forty-four ounce margarita

Cantaritos built over citrus and ice. Don Julio, Patrón and Tres Generaciones poured by name across blanco, reposado and añejo. Margaritas in four sizes, six flavours, and by the pitcher. Mexican beer by the bottle and on draft.

None of it is reachable from the navigation of the restaurant's current website — the "Beverages" page there lists soft drinks.

Why the name

A maguey is an agave

A maguey is an agave. When it matures its pineapple-like heart fills with aguamiel — honey water — which is fermented and twice distilled to make tequila, named for the town in Jalisco where it is made. The restaurant is named for the plant.
